Chicken casserole

Ginger has been known for thousands of years for its many health benefits, and culinary uses.
Because it contains hundreds of compounds and metabolites, ginger will benefit your overall health, in many different ways.
Some of the known health benefits of ginger is reducing inflammation, support digestion and reduce pain and nausea.

These days, ginger is also extremely popular in all types of dishes, juices, smoothies, single shots, and as supplements.

Even though it’s still summer, I sometimes crave a good chicken casserole.
I use a lot of fresh ginger, both for cooking, but also in my smoothies, and my Ginger base mix has become a favorite when it comes to cooking, because it adds a great flavor to any meat, casserole or dressing.

Ginger base mix

  • 1-2 inch grated fresh ginger
  • 3-4 cloves of garlic
  • 1/2 diced red onion
  • a pinch of chili flakes
  • Ground pepper
  • 1 tbsp of coconut oil for frying

For the casserole you also need

  • 2-3 chicken breasts
  • 1 can of organic coconut milk
  • Fresh basil
  • 2 tbsp gluten free tamari
  • salt & pepper to your taste
  • Coconut oil for cooking

How to:
Chop red onion, garlic and ginger and fry them in coconut oil, add chili flakes and pepper – stir for about 2-3 minutes.
Cut the chicken breasts into squares and add them to the Ginger base mix. Add the tamari, stir and let it cook for 10 min
Add coconut cream, stir for a couple of minutes. Then let it cook for 2-2 1/2 hours at low heat.
